At 6 a.m., before most of Washington Road in Evans has opened, the lights are on at 556 Mullins Colony Drive. Paris Baguette posts daily hours of 6 a.m. to 10 p.m. there, next door to CAVA in front of the Mullins Colony shopping center. Up the road in the Publix center, Biscuit Belly has been serving biscuits since 7:30 a.m., and by 2 p.m. on a weekday it is closing for the day.
This fall's new arrivals on that stretch serve mornings, pastries and dessert. The dinner additions on the same few blocks are all one cuisine, Mediterranean. So the new options you get on this part of Washington Road depend on the hour more than on the address.
Three openings, and none of them is a dinner place
Biscuit Belly opened on Tuesday, October 6, at 4274 Washington Road, Suite 2. That's the Publix-anchored shopping center that Augusta Business Daily calls Evans Town Center. A week later, the Augusta Chronicle confirmed it was open. The menu is brunch built around scratch-made biscuits: biscuits and gravy, biscuit doughnuts, sandwiches and pancakes. WJBF reported that the Kentucky-based brand counts Evans as its third Georgia location. The restaurant moved into the space Orangetheory Fitness used to occupy, and the finished space was planned at 2,400 square feet.
Paris Baguette was open by mid-October, according to Augusta Business Daily. Its October 15 report lists grab-and-go items with prices: macarons for $3, Sticky Milk Buns for $4.59, a mini Caramel Apple Streusel Tart for $5.99, stuffed croissants from $5 to $6, a slice of Ganache Cream Cake for $8 and full cakes around $50. The bakery also sells fresh bread, sandwiches, roasted coffee and lattes. The same outlet describes the brand as founded in Seoul, South Korea.
The Peach Cobbler Factory is the third, and it isn't open yet. Its address is 4272 Washington Road, Unit 4, next to Biscuit Belly in the same center. The brand started in Nashville and began franchising in 2022. Its dessert list starts with peach cobbler and banana pudding.
When the cobbler shop was announced in July, Augusta Business Daily summed up the center's lineup this way: "Breakfast, Lunch, and Dinner. Check. Groceries. Check. Dessert?" Three months later, the dessert and breakfast pieces are in place or nearly there. The newest dinner option on this stretch has also arrived, and it adds to a cuisine that already has two restaurants nearby.
Dinner went the other way
Laziza was already operating at 4272 Washington Road, Suite 8A, in the same Publix center. CAVA opened at 560 Mullins Colony Drive on Wednesday, November 26, 2025, according to The Augusta Press. A third is coming. YABA Mediterranean Grill is taking over the former Rally Point Grille space in the shopping center with Shane's BBQ and NY Butcher Shoppe. It will serve made-to-order shawarma, falafel, gyros and bowls, and Evans will be its third location after two in North Carolina.
The Let's Talk Augusta group noticed the cluster before the banner had been up long. A commenter there, quoted in Augusta Business Daily's September 22 report, counted it out: "There will literally be 3 Mediterranean restaurants within a mile of each other."
Before lunch and after dinner, the stretch now offers new things. For an evening meal, the new choice on these blocks is mostly which shawarma bowl you want, unless you head somewhere else.
Posted hours, side by side
The hours make the split clear. These are the posted hours on each business's own location page as of mid-October 2026, and they can change, so check before you drive over.
| Spot | Address | Posted hours | Status |
|---|---|---|---|
| Paris Baguette | 556 Mullins Colony Dr | 6 a.m. to 10 p.m. daily | Open |

| Laziza | 4272 Washington Rd, Suite 8A | 11 a.m. to 9 p.m. Mon to Sat; closed Sun | Open |
| CAVA | 560 Mullins Colony Dr | See location page | Open since Nov. 2025 |

A few things follow from that grid.
- Biscuit Belly is a morning plan. It closes at 2 p.m. Monday through Thursday and at 3 p.m. Friday through Sunday, so it won't work as a late-lunch fallback.
- Paris Baguette covers both ends of the day. It opens at 6 a.m. and closes at 10 p.m., so it works for an early coffee and for picking up a cake after dinner somewhere else.
- On Sundays, the Mediterranean count drops by one. Laziza lists Sunday as closed, and Biscuit Belly's 3 p.m. weekend close means a late Sunday lunch at the Publix center takes some planning.
Two addresses, two parking situations
The new openings sit in two separate pockets, and parking works differently at each.
At Mullins Colony, Paris Baguette and CAVA share frontage in front of the shopping center. Augusta Business Daily warned that parking "could be a challenge for both of those popular eateries" and said some customers may need to park in the shopping center and walk over. With Paris Baguette open until 10 p.m., the lot is shared with CAVA's dinner crowd through the evening.
At the Publix center at 4272 and 4274 Washington Road, the new tenants arrived during a renovation. Augusta Business Daily's July report said Peach Cobbler Factory was "working around the renovations at the Evans Town Center" as it built out its space. The same report listed the rest of the mix: a Mediterranean restaurant and a Chinese restaurant, a sub shop, and McDonald's and Taco Bell along the edge of the center at 4274 Washington Road. A breakfast place and a dessert shop next to each other give that center an order of stops it hasn't had before: biscuits in the morning, groceries at Publix, cobbler later.
This Washington Road cluster is a different kind of place from the restaurant row on Towne Center Drive. That stretch has filled in with owner-operated restaurants, while the Washington Road newcomers are franchise and multi-location brands from Kentucky, Nashville, Seoul and North Carolina. You go to Towne Center Drive for dinner, and to Washington Road for what comes before and after.
Friday's ribbon cutting, and what's still pending
This Friday, October 23, the Augusta Metro Chamber holds a ribbon cutting for The Peach Cobbler Factory from noon to 1 p.m. at 4272 Washington Road, Unit 4. The Chamber's listing says no registration is required and the event is open to the public. The ribbon cutting may not be the shop's opening day. The company's own Evans location page still said "Coming Soon" in mid-October, and WJBF reported in late August that no opening date had been announced. Check the location page before you plan dessert around it.
YABA Mediterranean Grill's September announcement in Augusta Business Daily gave no opening date or street address, only the former Rally Point Grille space and the shopping center it shares with Shane's BBQ and NY Butcher Shoppe. Once it opens, this stretch of Washington Road will have the three Mediterranean restaurants the Let's Talk Augusta commenter counted. For the rest of the day, the newcomers are a biscuit counter, a bakery with long hours and a cobbler shop.
